Here's a recipe I adapted from an online recipe. I've already made it twice this week (once for us and once for another family) and Eric was hoping Matthew wouldn't finish so he could snag the leftovers. If you are looking for alternatives to red meat, here is a great one (easy too!)
Turkey Sloppy Joes
1 lbs ground turkey
1 c onion, thinly sliced
1/2 c green pepper chopped
1 1/4 c ketchup
1 1/2 t Dijon Mustard
1 1/2 t chilli powder
1 t Worcestershire sauce
1/2 t seasined salt
1/2 t garlic powder
2 t brown sugar
8 hamburger buns
Over medium heat in a large skillet, saute ground turkey, onion, and green pepper for 5 minutes or until turkey is no longer pink. Add remaining ingredients (except the buns). Bring to a slight boil, then reduce heat to low. Cover and simmer 30 min.
